As Promised - Our Dosa Filling Recipe



Hello friends! We've been under the weather here at Chez Condill. Kit went all out last night to make some Dosas to help me on my road back to health. As I was enjoying every bite of their yumminess, I remembered - friends have asked to know how we make our filling. So, without further ado...

Potato Dosa Filling a la our friend Joe...along with some additions from Kit as well

Boil 4-5 medium-sized potatoes until soft (we like to use red potatoes).

In a skillet, sautee a yellow onion in an oil of your choosing until translucent, add as many chilies as you can handle, two to three cloves of garlic and 10-12 curry leaves and sautee for a bit longer.

Add in the potatoes along with a couple of shakes of curry powder, tumeric and salt to taste. Kit also adds a dash of cumin and a pinch of whole corriander seeds.

Remove from heat and add mustard seeds.

Et puis, voila...a delicious Potato Dosa Filling is yours! 

Now, fry up some Dosas and enjoy!
